How we can update this field "priority_flag" in Order?

In Order query there is a field priority_flag how we can update this field? this field is missing in UpdateOrderInput.

Thanks for catching this. We are currently working on adding some missing fields on our Queries & Mutations.
I already mentioned this so when updating fields on the UpdateOrderInput this one is included.
I will let you know as soon as this is available.

The priority_flag field should be available now in the UpdateOrderInput as a Boolean
