I created a shipment using shipment_create mutation but I set “notify_customer_via_shiphero” and “notify_customer_via_store” incorrectly. Can I do an update to change these 2 values? I didn’t see a shipment_delete option either.

Unfortunately no. Shipments are not updatable, as they are the final information set for the delivery, addresses, method, etc., just as the label or the information sent to the carrier.
